(Photo courtesy of That's My Jamm) David Ruiz of Mr. Smith's makes jams and preserves just for cocktails. I wrote about it with a quick note about jam in cocktails historically, and in which bar you can find a mezcal drink with strawberry-raspberry-jabanero jam. Yumz. Read about That's My Jamm on Tasting Table. The story is here. Read more →

In today's blog post for Fine Cooking, I talk about good tonic water. Chances are if you read Alcademics you don't need to be told about it. But here is something you may not know: If you subsribe to Amazon Prime, the service for which you pay for a year's unlimited shipping, you can get these tonic waters at less than retail price. Amazon offers Fever-Tree Tonic Water in a 24-pack for $32.46, with free shipping for Amazon Prime. At retail at Bevmo it's $32.94 for 24, plus tax and recycling. Amazon also has a 24-pack of Q Tonic for... Read more →

Though dessert and pastry-flavored liqueurs are all the rage these days, I am amazed at the amount of alcoholic whipped cream products coming out. There are now at least two brands of whipped cream flavored vodka (Burnett's Whipped Cream flavored vodka and Pinnacle Whipped Vodka) and two brands of alcoholic whipped cream (Whipped Lightning and Cream Alcoholic Whipped Cream). I can imagine college bars will soon start serving shots of the whipped cream vodka with alcoholic whipped cream on top. Woooot! Read more →

Bushwhacking in Tuscany: Juniper Berry Harvest Video

Last week I went to Tuscany with Bombay Sapphire to see a demonstration of juniper berry harvesting. I'll try to post more information in a little bit, but for now here's how they do it: Using a flat, round basket and a short hard stick, they whack the juniper bush branches so that the berries fall off. They want only the blue, ripe berries and not the green, unripe ones that will be ready the following year. Thus they must hit the bush with a certain force that removes one ripeness of berry and not the other. Read more →

Shelling Out for the Top Shelf

Oooh busted! I'd heard that it was common practice in nightclubs to pay for placement on the top shelves but I don't think I knew that it was illegal. Nearly all the top liquor companies got busted and fined for violating the "slotting fee" prohibition at Harrah's (through a third party). According to the TTB: The allegations of tied house violations stem from the companies' participation in the 2008-2009 Harrah's Nationwide Beverage Program. The TTB investigation, which focused on activities in the Las Vegas area, alleges that the companies collectively furnished nearly $2 million in inducements through a third party... Read more →

The cocktail that helped bartender Marc Bonneton win the Bacardi Global Legacy Cocktail Competition is a rather simple spin-off of the Ramos Gin Fizz. (Image courtesy of Bacardi.) Marco's Bacardi Fizz substitutes rum for gin and Chartreuse for orange flower water. In my latest post for FineCooking.com, I list both recipes. I've left the original metric units for accuracy, and converted them to approximate fluid ounces, so some adjustment may be neccesary. Marco's Bacardi Fizz by Marc Bonneton 50ml (1.75 fl. oz.) Bacardi Superior rum 40ml (1.5 fl. oz.) Cream 15ml (.5 fl. oz.) Green Chartreuse 15ml (.5 fl. oz.)... Read more →
