The Fizzy Mary combines the enriching vegetables and hair-of-the-dog booziness of the typical Bloody Mary with stomach-soothing fizz created by Nitrous Oxide. The drink has a wonderful tingle on the lips and better yet, the nitrous bubbles will go right to your head. After a few experiments I found I liked the Fizzy Mary best charged with whipped cream canisters (nitrous charges), while the garnish I preferred carbonated (soda chargers). I ended up using the Perlini cocktail carbonating system for the liquid and the iSi whipped cream canister for the garnishes, but there’s no reason you couldn’t use one tool... Read more →

For the month of December I'll be looking at the pomegranate and its use in cocktails, including in grenadine and in PAMA pomegranate liqueur, the sponsor of the project. Check out the information developed just for bartenders at PamaPros.com. How to Remove Pomegranate Seeds It seems there are a few ways to remove the seeds from a pomegranate, a process that can leave one covered in clothing-staining red juice from head to toe. The hard way seems to be manually as below. From what other people have said, using the bowl of water saves a lot of the mess. The... Read more →

Japanese mixing glasses are beautiful but they don't travel so well. Brand ambassadors and other traveling bartenders have come up with various creative solutions to this problem, but finally a commercial version goes on sale this week. Phillip Mauro, Vince Toscano, and Jon Gasparini, who work at Rye in San Francisco, created an insulated mixing glass case that fits not only the popular Yarai pitchers, but also the plain Japanese mixing glasses and even chemistry beakers that some bartenders use. It's made in the San Francisco Tenderloin. They call it the Pitcher Protector. There are two colors for now: a... Read more →

Check out the information developed just for bartenders at PamaPros.com. What the heck is a pomegranate? The name "pomegranate" comes from two Latin words for "seeded" and "apple", which makes a lot of sense, given that a pomegranate looks like and apple and is full of seeds. (Fun fact: The word "grenade" was inspired by the pomegranate.) The pomegranate fruit grows on a small tree or shrub. The tree is native... Read more →

During Portland Cocktail Week, Mindy Kucan (now of Portland's Hale Pele) was making a version of a Rye Buck that I thought was very tasty, so I asked her for the recipe. A buck, as you might know, is any spirit plus ginger beer and a squeeze of citrus. To the standard formula she added BG Reynold's Don's Mix, which is a syrup of grapefruit and cinnamon. I remember it being spicy and refreshing to boot. Rye Buck a la Mindy Kucan 1.5 oz Knob Creek Rye .75 oz lime juice .5 oz BG Reynolds Don's Mix 1.5 oz Ginger... Read more →
