February 2013

Today's post is an excerpt from the new book Craft Cocktails at Home: Offbeat Techniques, Contemporary Crowd-Pleasers, and Classics Hacked with Science by Kevin Liu. The book is heavy on the science, which is awesome. And you can download the Kindle version for free Thursday, February 28 - Saturday, March 2. Liu gave me permission to reprint a huge section on water, which is below. Thanks Kevin! Transform Tap Water into Magical Alpine Fairy-Water STOP. Walk over to your sink, pour yourself a glass of water straight from the tap. Taste it. Does it taste delicious? Like fairies extracted dew... Read more →

Sugar House in Detroit has launched a new cocktail menu with both seasonal drinks and 100 Classics "carefully selected & perfected for your consideration". I asked Dave Kwiatkowski what the criteria were for being on the list - Most popular? Essential? Best? His answer was a little bit more involved than I expected but interesting. I started out by picking my favorite classics (Manhattan, Sidecar, Gimlet, etc.) and made each one, dialing in the recipe until I was happy with the result. Once I had those (maybe 40 all in all) I started digging thru old books, looking for familiar... Read more →

Last year I wrote the 50 Things to Drink in San Francisco Before you Die list for 7x7 Magazine. Recently, Jennifer Essex transferred all 50 bars onto a Google map. Awesome! She didn't name the drink that goes with each bar on the map, so you'll need both the map and the list in order to complete them all. My latest story for Details.com is up! It started as a story about how cocktails in Lincoln's day were different from what they are today, but then I realized that many of the drinks are trendy again. Drinkin' Like Lincoln: : 19th-Century Cocktail Trends That Are Trendy Again Daniel Day-Lewis wasn't sucking back any mai tais in Lincoln, so if you want to coordinate your Oscar-party cocktail menu with this Best Picture nominee, you'll have to think historically. When our country's very first bartender's guide, How to Mix Drinks, was published the year after Abraham Lincoln took office in 1861,... Read more →

I was interviewed recently for a story in a magazine for the iPad/iPhone called The Magazine. During the interview we were joking that I'm the Ice King of the Internet. The quote didn't make it into the story, but I've adopted that as an official title. Hail your new king! In the story, writer Alison Hallet covers the history of ice in drinks, current ice machines, how bars are using big ice, and how to make big ice at home (with my cooler strategy). I get too much credit for bringing an iceberg from Newfoundland to last year's seminar at... Read more →

Pavan Liqueur has launched in the United States and to celebrate they are offering a chance to win a four-day trip for two to Paris and the French Riviera for voting in their Perfectly Paired Cocktail Competition on Facebook. Pavan is a liqueur made with muscat grapes from the AOC (Appellation d’Origine Controlee) region of Frontignan in Southern France, with a touch of orange blossom. The name Pavan is from a classic French dance of the peacock. They recommend drinking it with sparkling water or on ice; or mixed with vodka, gin, tequila or champagne. There are several recipes on... Read more →
