March 2013

This February I was lucky to be invited to visit the Nordic Food Lab, which is located on a boat floating in a harbor off Copenhagen. It was formerly the research lab of the world's top-rated restaurant NOMA, and I believe they still have a close relationship and work together on projects. The lab is pretty small: A few work tables, refrigerators and cabinets on both sides of the room, and tons of samples in bottles, barrels, bags, and jars everywhere. It reminded me a lot of my apartment, except that the swaying back-and-forth was coming from the water beneath... Read more →

The Deans of Drink by Anistatia Miller and Jared Brown is a biography of bartenders Harry Johnson and Harry Craddock. Harry Johnson is famous for his book, Harry Johnson's New and Improved Bartender's Manual from 1882. (Apparently there was also an 1860 that nobody can seem to find.) Johnson worked as a bartender in San Francisco, Chicago, Ne York, and Philadelphia. Harry Craddock was a London bartender and author of the Savoy Cocktail Book from 1930. You can read all about him in this previous post on the matter. The Two Deans details the lives of these bartenders, but also... Read more →

Recently I was in London and explored several bars I hadn't been to previously, along with a couple I was excited to revisit. Experimental Cocktail Club in Chinatown Experimental Cocktail Club has bars in Paris including Curio Parlor, Prescription Cocktail Club, Beef Club & Ballroom, Compagnie des Vins Surnaturels, this one in London's Chinatown, and in New York. Coming soon are Fish Club in Paris and a beach bar in Ibiza. I hadn't been to any of them until this visit in London. It was a Friday night and the streets were completely packed with people, but once I was... Read more →

In January I flew to London for an event to celebrate the life and career of Harry Craddock, author of the Savoy Cocktail Book. The event was sponsored by Plymouth Gin, which is mentioned by name many times throughout the Savoy. The tour was attended by Plymouth's distiller Sean Harrison, the top London bartenders, and a few special folks flown in from around Europe. Just a few of the bartenders presernt were Ago Perrone, Alex Kratena, Esther Medina, Gareth Evans, Geoffrey Cannilao, Stuart McCluskey, and Nick Strangeway. They helped bring over Erik Ellestad from San Francisco; probably the only person... Read more →

In London, one of the best areas for bar-hopping is Shoreditch. It seems to be a nightlife neighborhood filled with smaller pubs and a few clubs with some of the city's best cocktail bars smattered about. Ones I've been to include in the neighborhood include Callooh Cally, Nightjar, Worship Street Whistling Shop, and Happiness Forgets. On my visit to these bars I took a long walk from my hotel, the budget-priced Tavistock Hotel that I'd recommend for those who can't afford the usual $350+/night rooms of London. (Even looking on AirBnB I couldn't find of anything much in neighborhoods I... Read more →
