The LA Times reported yesterday that under a new food safety law in California, bartenders are required to wear gloves when handling garnishes. "Changes to the California Retail Food Code that went into effect at the beginning of 2014 require disposable gloves or utensils such as tongs, paper or scoops to be used when handling "ready-to-eat" foods, which include sushi, bread, deli meats and fresh fruit and vegetables. The most sought-after bourbon in the world, Pappy Van Winkle 23-year-old, begins life as 53 gallons of new-make whiskey at 114 proof. What's left in the barrel after 23 years is a mere 14 gallons of bourbon at around 135-140 proof. What makes it into the bottle is even less. So I decided to run the numbers on how much Pappy Van Winkle is left in the barrel every year after evaporation (aka the "angel's share"). Six new scotch whiskies have launched of late. Here's the deets: Glenmorangie Companta Glenmorangie Companta is the newest release from Master Distiller, Dr. Bill Lumsden. Part of Glenmorangie Companta (Scots Gaelic for friendship) had been matured in traditional American white oak ex-bourbon barrels, then was transferred into casks having previously contained Grand Cru wine from Clos de Tart. Another part was had been extra maturing in casks having previously contained a sweet fortified wine from Cotes du Rhone. I've been bursting waiting for the Saveur 100 issue to come out so I could write more about Gamsei, a bar I visited in Munich this fall and included in the January issue of the magazine. The current January issue is the annual Saveur 100: "Our favorite places, tools, ingredients, cookbooks, recipes, restaurants, and more." I have two small bits in the magazine.
